[Valentine’s Day Menu] Delicious recipes to prepare a special dinner for two

February 14th is approaching, so I am bringing you a Valentine’s Day menu suggestion for two.

I never celebrate Valentine’s Day.

Ivan and I are very pro-love, but not at all romantic, so we don’t usually do anything special on this day.

Also, whenever people talk to me about Valentine’s Day, I see it more as a day of self-love.

But don’t worry, because whether you celebrate Valentine’s Day with a romantic dinner at home with your partner or not, you can use this menu to celebrate any special occasion, because it is full of super appetizing and healthy recipes. 

And what better way to celebrate than by giving your body the most delicious!

Enjoy delicious dishes and stay healthy at the same time, what more could you ask for?

The menu consists of a starter, a first course, a second course, and a dessert.

You will see that everything is super easy to make, that you will not have to complicate your life too much, but that they are still very attractive and tasty recipes.

When you think of Valentine’s Day, roses and strawberries come to mind, right?

Well, this recipe has one of two things.

As a starter, I suggest a salmon tartar with avocado and strawberries, which I am sure will surprise you when you try it.

It gives a sophisticated touch to the food and is made in very little time because you only have to cut the ingredients into small pieces and mix.

You’re dying!

✅ Ingredients for salmon tartar with avocado and strawberries: 

  • 180 grams of wild salmon.
  • A large handful of organic strawberries.
  • ½ avocado.
  • ¼ spring onion.
  • Cilantro to taste (you can substitute it with basil, mint, chives, or whatever you like best).
  • Pistachios (optional).
  • 1 tablespoon extra virgin olive oil.
  • 1 teaspoon tamari.
  • A splash of lemon.
  • A ¼ tablespoon of mustard.
  • Pinch of pepper and salt.

✅ Procedure: 

  1. Cut the wild salmon into very small pieces, previously frozen (72 hours minimum) and defrosted in the refrigerator.
  2. Wash the strawberries, remove the stems, and cut them into very small pieces.
  3. Also cut the avocado and the spring onion, the latter even smaller, and finely chop the cilantro.
  4. Once you have everything cut and set aside, you need to make the sauce. To do this, put the extra virgin olive oil, tamari, a splash of lemon, mustard, salt, and pepper in a bowl. Mix everything well until it emulsifies.
  5. Add the sauce to the rest of the chopped ingredients to marinate them, and in 10 or 15 minutes it will be ready. You can also make it a while before eating and leave it in the fridge.
  6. Serve it with a ring and decorate it with a little cilantro, pistachios, and strawberries on top.
  7. And ready to eat!

👉 Valentine’s Day menu: a delicious roasted vegetable dish with homemade chimichurri as a starter. 

This is a recipe that Ivan surprised me with one day and I fell in love with it.

It is a super simple dish, but it is very, very tasty, which is why it could not be missing from this menu.

You will see that the combination of the potato and the sweet potato with the rest of the ingredients and the chimichurri is brutal. 

You’re going to love it as much as I do.

✅ Ingredients for the roasted vegetables with homemade chimichurri:

  • 1 potato.
  • 1 sweet potato.
  • ½ eggplant.
  • 1 zucchini.
  • 1 beet.
  • Pepper and salt to taste.
  • Extra virgin olive oil.

➕ For the chimichurri: 

  • 50 milliliters of extra virgin olive oil.
  • 3 tablespoons unfiltered apple cider vinegar.
  • 20 grams of chives.
  • 20 grams of parsley.
  • 20 grams of cilantro.
  • 1 clove of garlic.
  • ½ cayenne
  • ½ teaspoon salt.

✅ Procedure: 

  1. Cut the potato, sweet potato, eggplant, zucchini, and beetroot into pieces of roughly the same size.
  2. Next, preheat the oven to 180º for about 10 minutes and place the vegetables on a baking tray lined with parchment paper. Sprinkle them with salt and pepper to taste, and a dash of extra virgin olive oil.
  3. Place the tray in the oven for 30 minutes at 180º degrees with heat from above and below.
  4. While the vegetables are roasting, make the chimichurri. All you have to do is blend all the ingredients in a blender or crush them with a mortar and pestle.

And enjoy!

👉 Eggs in a cocotte with asparagus and truffle for your special dinner for two.

Eggs en cocotte are one of my favorite recipes for a special dinner.

They are sure to be a hit. They have nothing to envy of a restaurant dish, and I’m not exaggerating!

So they are perfect for a Valentine’s Day menu (or a non-Valentine’s Day menu since you already know that you can prepare this menu whenever you feel like it).

They are delicious, easy, and quick to prepare, they include vegetables and quality proteins and they are wonderful because they are very light.

Keep in mind that to make this recipe I have used two individual cocottes, but you can use any container that is suitable for the oven.

✅ Ingredients to make this creamy delight: 

  • 4 eggs.
  • ½ onion.
  • 1 bunch of asparagus.
  • 2 tablespoons of truffle paste.
  • 6 dried tomatoes.
  • 1 tablespoon nutritional yeast (optional).
  • 1 brick of thick vegetable cream.
  • 2 tablespoons of extra virgin olive oil.
  • Salt to taste.
  • Pepper to taste.

>> NOTE: This recipe is super versatile because in addition to asparagus, you can add any vegetables you like.

✅ Procedure: 

  1. Preheat the oven to 180°C.
  2. Meanwhile, cut the onion into small pieces. Do the same with the asparagus (removing the hardest part).
  3. Then add the asparagus and fry for 3 more minutes. Finally, add the chopped sun-dried tomatoes and season with salt.
  4. When ready, divide into the small ramekins (or whatever container you have chosen) and add 3 tablespoons of cream and half a tablespoon of truffle paste to each portion.
  5. Finally, add the egg and nutritional yeast, and put it back in the oven for a little longer! Between 6 and 10 minutes for them to finish cooking.
  6. When serving, adjust the salt and pepper.

And now you are ready to eat this delicious dish!

And finally, the final touch: the super dessert. 

Chocolate truffles are made with just two ingredients that are ultra-delicious.

What would Valentine’s Day be without chocolate? Nothing!

Well, Valentine’s Day and no special date, because if you are as much of a chocolate lover as I am, you will know that you can’t celebrate anything without chocolate. 

Take note!

✅ Ingredients to make chocolate truffles: 

  • 125 grams of 80% or 85% chocolate bar (these are the ones I buy, because the higher the percentage of cocoa, the less sugar. But if you still have a sweet tooth, you can buy 70% and gradually increase the percentage).
  • 100 milliliters of canned coconut milk
  • 1 pinch of salt (optional)
  • ¼ teaspoon vanilla (optional)

> NOTE: You can use vegetable cream or another type of milk instead of canned coconut milk to make the recipe.

But keep in mind that if you make it with milk from a carton, the texture will not be as creamy, because the trick to making them creamy is for the milk to have a higher proportion of fat (as is the case with coconut milk or vegetable cream).

✅ Procedure: 

  1. Cut the chocolate bar and melt it in a bain-marie. To do this, put a saucepan with two fingers of water on the fire and place a bowl on top. It is important that the water in the saucepan does not touch the bowl and that it is only heated by the steam that the hot water will give off.
  2. Once the chocolate is melted, add the canned coconut milk, salt, and vanilla (optional) to the bowl.
  3. Place the bowl in the refrigerator and chill the mixture for approximately 2 hours, until it is firm.
  4. Then take it out of the fridge, form the balls, and coat them in red berry powder (if you don’t have any, you can use pure cocoa powder).

You will end up with some delicious and beautiful truffles! They are perfect!
