Cooking with leftovers: my 5 key recipes to avoid wasting any food

This week I told you that I have always been very concerned about food waste.

It’s a topic I’m very aware of.

I not only like to take advantage of foods that are about to go bad or expire, but I am also one of those who take advantage of everything that can be eaten.

You just have to use a little imagination, because what is really important is to contribute to reducing the brutal amounts of food that are thrown away every year.

But since I want to continue helping you to get started today, I’m going to give you my 5 key recipes with foods that are usually thrown away no matter what.

You’ll be amazed at the amount of possibilities there are!

👉 Pesto with carrot leaves: a delicious and simple recipe for leftovers.

Have you ever tried pesto with carrot leaves

I can tell you in advance that it is super delicious.

When I buy organic carrots, I usually use the leaves to make this recipe.

These leaves have a very strong flavor to put in a salad, but that makes them ideal for making a delicious pesto if you mix them with other ingredients (which I will tell you about below).

Simply blend all the ingredients in a blender or Personal Blender .It’s that easy!

✅Ingredients:

  • 70 grams of leaves from a bunch of organic carrots.
  • 1 clove of garlic.
  • 70 grams of toasted almonds.
  • 10 milliliters of lemon juice and zest to taste.
  • 60 grams of nutritional yeast.
  • 120 milliliters of extra virgin olive oil (approximately).
  • 1 teaspoon salt (or to taste).
  • Ground black pepper to taste.

Bone broth is a great recipe for leftover cooking because it is packed with nutrients and super affordable. 

All you have to do is save and freeze the leftover bones when you eat roast chicken, beef stew… until you have a kilo.

You can also use vegetables to make it (I do it with celery) that you have frozen before they went bad or were a little soft.

 

👉 The famous baked potato skins from Lavapiés

Did you know that there is a restaurant in Lavapiés (Madrid) that is super popular for serving baked potato peelings? It is always packed!

I think it’s a very interesting idea because whenever we make an omelet baked potatoes, we always have leftover skins and the usual thing is to throw them away.

But that is a very serious mistake.

Because if the potatoes are organic and we wash them very well with a brush before peeling them, we can use the skin.

With the peelings from the potato skins, you can make some delicious chips (with the ingredients I leave you below).

You just have to put them in the oven at 180 or 200 degrees top and bottom, without a fan, and keep an eye on them until you see that they are crispy so that they are delicious.

✅Ingredients:

  • Potato skins that you have left over from an omomeletbaked potatoes…well washed and organic
  • Garlic powder to taste.
  • 1 splash of extra virgin olive oil.
  • Paprika to taste.
  • Pepper to taste.
  • Salt to taste.

Normally when you make zucchini cream you peel it so that it is lighter (although I always leave the skin because I buy organic ones), so you can use the skin that you are going to throw away to make an omelette.

In fact, I assure you that it will be much tastier than if you make it with zucchini and zucchini ski, because it has less water and will be more consistent.

You can also use cauliflower or Romanesco leaves especially when they are organic because they contain a lot.

All you have to do is fry some chopped onion, along with the courgette peels (or cauliflower or Romanesco leaves), pour it all into a bowl with the beaten egg, and pour the mixture into the pan to make the omelet cooking. cooking

➡️Tip: You can accompany the omelet with the rest of the cauliflower (or romanesco) leaves that you haven’t used, cooking them with a little onion, garlic, and potato. And also with broth made with the leftover vegetable peelings (I recommend that you freeze them until you have a lot and can make the broth).

Normally when I make pancakes I melt chocolate with a little bit of vegetable milk and the truth is that I almost always have some left over. cooking

Just let the leftover chocolate cool in the fridge until it hardens, and you can make truffles in just a few steps. cooking
