My favorite dressings to take bland healthy dishes to delicious gourmet dishes

👉 5 easy-to-prepare sauces to accompany your healthy dishes

✅ Green pesto 

  • 25 grams of fresh basil.
  • ½ clove of garlic.
  • 10 grams of pine nuts or walnuts.
  • 35 grams of nutritional yeast.
  • 3 tablespoons of extra virgin olive oil.
  • 2 tablespoons of water.
  • 1 pinch of salt.

You just have to wash the fresh basil leaves and put them in a blender glass along with the rest of the ingredients. Then blend everything well until you obtain a homogeneous mixture.

> NOTE: If you can’t find fresh basil, you can also make this pesto with fresh spinach, broccoli, kale, or mint (but use less in the latter case because the flavor is stronger).

If you store this sauce in a glass jar in the fridge with a little extra virgin olive oil on top, it will last a long time.

✅ Magic Sauce

  • 3 roasted garlic cloves.
  • 4 tablespoons of capers.
  • 1 teaspoon mustard.
  • 1 tablespoon of thyme.
  • Lemon juice to taste.
  • 3 tablespoons of extra virgin olive oil.
  • Salt and pepper to taste.

Again, put all the ingredients into a blender jar and blend well until combined.

It’s that simple!

✅ Caesar sauce

  • 70 grams of soaked cashews (soak for 2 hours).
  • 1 clove of garlic.
  • 70 milliliters of water.
  • 30 grams of extra virgin olive oil.
  • Juice of half a lemon.
  • 2 tablespoons of nutritional yeast.
  • 2 tablespoons of capers.
  • 1 teaspoon of mustard (Be careful if the mustard is Dijon! In this case, use much less).
  • 1 teaspoon salt.

To make this sauce you will have to soak the cashews for approximately 2 hours. 

Then, remove them from the water and put them in a blender with the rest of the ingredients. Blend everything until you obtain a creamy and homogeneous mixture.

And now you will have a delicious sauce for your salads!

 

✅ Walnut sauce

  • 70 grams of extra virgin olive oil.
  • 180 grams of walnuts.
  • ½ clove of garlic.
  • 150 milliliters of almond milk (or your favorite vegetable milk).
  • 3 tablespoons of nutritional yeast.
  • Salt to taste.

Mix all the ingredients in a blender and blend everything together until you obtain a homogeneous sauce.

If you want the sauce to be a little more liquid, you can add a little more vegetable milk.

✅ Black garlic aioli

  • 1 organic egg (optional).
  • 125 milliliters of extra virgin sunflower oil.
  • ½ clove of garlic.
  • 1 clove of black garlic.
  • Apple cider vinegar or lemon juice to taste.
  • Salt to taste.

>> NOTE : If you can’t eat eggs, you can make this aioli without using them.

Before making the preparation, take the egg out of the refrigerator so that it is at room temperature.

Next, add all the ingredients (except the black garlic clove) into a blender jar.

Blend with the blender placed at the bottom of the glass and gradually increase until you get a creamy texture.

It is important that you do this process slowly and carefully so that the emulsion does not curdle.

Finally, once this is done, add the peeled black garlic to the mixture and beat again until the sauce takes on a greyish colour.

And enjoy your black garlic aioli!

👉 Formula to make tasty vinaigrettes to accompany your healthy dishes

And now I’m going to give you the formula to make delicious vinaigrettes that will go great with your salads and vegetables.

This formula is very versatile, you can change it according to your tastes and the ingredients you have at home. 

You will see that it will become a basic resource in your kitchen from now on, because whatever combination of ingredients you choose, this vinaigrette will give your dishes a delicious touch.

Ingredient proportions: 

  • 3 tablespoons of quality oil.
  • 1 tablespoon of acid.
  • ½ tablespoon of sweet (optional).
  • ½ tablespoon of mustard.
  • ¼ tablespoon of aromatic herbs.
  • ¼ tablespoon of spices.
  • Extra: nutritional yeast.

Ingredient combinations you can use to make your vinaigrette: 

  • Acid: apple cider vinegar, lemon, lime, tangerine or orange.
  • Sweet (optional): date syrup or maple syrup.
  • Quality organic mustard.
  • Aromatic: basil, coriander, parsley, thyme, sage…
  • Spices: salt, pepper, garlic powder, onion powder, cayenne powder, paprika…
